Dill and Lemon Steamed Salmon

Dill and Lemon Steamed Salmon
4 – 4 oz. salmon fillets with skin
2 Tbsp butter, melted
2 Tbsp extra virgin olive oil
1 fresh lemon, juiced
1 Tbsp fresh dill (or 1 tsp dried)
2 Tbsp Worcestershire sauce
Mix melted butter, olive oil, lemon juice, dill and Worcestershire sauce in a microwave safe dish. Lay salmon skin-side up in dish and cover with a lid or plastic wrap. Microwave on high 4 – 5 minutes for medium (or 3 minutes for medium-rare).
To serve, place the salmon skin-side down on a plate and spoon some the liquid over it. Add fresh-cracked pepper and salt to taste. Serve with a fresh salad and the vegetable side of your choice. (I like it with pan-grilled asparagus brushed with a little olive oil, and topped with a dash of salt and a squeeze of fresh lemon).

Note: cooking times will vary depending on your microwave and the thickness of the salmon fillets.
